Mint Paratha
 
Stuffed Paratha with vegetables and mint sauce. 

Ingredients
 
1 CupWhole wheat flour
2 tsp Oil
Salt a pinch.
For the mint sauce (for the dough)
1/2 cup Mint leaves
1/2 tsp Cumin seeds
1 Green chilies .
1/2 tsp Lemon juice
Salt to taste

Stuffing

1 cup Cabbage,chopped
1/2 cup Boiled green peas
1 no Potato,chopped
1/2 no Onion,chopped
1/2 Lemon (Juice)
A pinch Garam masala
1/2 tbsp Chopped coriander
1/2 tbsp Ground green chili
1/2 tsp Sugar
1 tsp Oil
Salt to taste
Oil or Butter for cooking

Process

Pour all the ingredients for the sauce with ΒΌ cup of water into a mixer and blend.
Take the sauce in a bowl. Mix the Wheat flour with mint sauce, oil,salt and prepare a soft dough.
Knead well and divide into 10 portions. Roll out the portions into thin rotis.

For the stuffing
Sprinkle salt over the cabbage and leave aside for 10 minutes. Mash the greenpeas.Heat the oil,and add the potato and crushed green peas.Add little water to it,cover and cook until soft. Add the cabbage and onion stir well and let it cook till soft. Add lemon juice, garam masala, coriander, green chili, sugar and salt.
Divide into 10 portions.
 
Stuff one at a time into rotis and roll them carefully and shallow fry with ghee(both sides)till golden brown. Repeat the process for rest of the parathas.

Serve with Raitha and Pickle.
